Description

A classic old-fashioned chocolate tart with a rich, velvety chocolate filling set in a crisp pre-baked tart crust. Perfectly balanced sweetness and texture for a timeless dessert.

Ingredients

Scale
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 large egg yolks, beaten
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1 pre-baked 9-inch tart crust (23 cm)

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, flour, and salt until well combined.
  2. In a separate bowl, lightly beat the egg yolks. Gradually whisk in the milk.
  3. Slowly pour the egg and milk mixture into the dry ingredients, whisking constantly to prevent lumps.
  4. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and resembles pudding, about 8-10 minutes. Be careful not to let it burn.
  5. Remove from heat and stir in vanilla extract and butter until fully melted and combined.
  6. Pour the chocolate filling into the pre-baked tart crust and spread evenly.
  7. Let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until set.
  8. Slice and serve chilled. Optional: top with whipped cream.

Notes

  • Ensure constant stirring during cooking to prevent lumps or burning.
  • Tamper the eggs by slowly adding hot milk mixture if desired for extra safety against curdling.
  • The tart can be stored in the refrigerator for up to 3 days.
  • Use high-quality cocoa powder for best flavor.
  • For a gluten-free version, use a gluten-free tart crust and substitute flour accordingly.
