Description
A classic old-fashioned chocolate tart with a rich, velvety chocolate filling set in a crisp pre-baked tart crust. Perfectly balanced sweetness and texture for a timeless dessert.
Ingredients
Scale
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 3 large egg yolks, beaten
- 2 cups whole milk
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
- 1 pre-baked 9-inch tart crust (23 cm)
Instructions
- In a medium saucepan, whisk together sugar, cocoa powder, flour, and salt until well combined.
- In a separate bowl, lightly beat the egg yolks. Gradually whisk in the milk.
- Slowly pour the egg and milk mixture into the dry ingredients, whisking constantly to prevent lumps.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and resembles pudding, about 8-10 minutes. Be careful not to let it burn.
- Remove from heat and stir in vanilla extract and butter until fully melted and combined.
- Pour the chocolate filling into the pre-baked tart crust and spread evenly.
- Let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until set.
- Slice and serve chilled. Optional: top with whipped cream.
Notes
- Ensure constant stirring during cooking to prevent lumps or burning.
- Tamper the eggs by slowly adding hot milk mixture if desired for extra safety against curdling.
- The tart can be stored in the refrigerator for up to 3 days.
- Use high-quality cocoa powder for best flavor.
- For a gluten-free version, use a gluten-free tart crust and substitute flour accordingly.
